Malted Chocolate Cake


This cake was on a link that my mother sent me last year and it popped up again a couple of weeks ago so it was about time I gave it a go! I’ve not made many chocolate cakes before and I always worry about making sponge cakes in case they don’t rise enough, or at all but then again, practice makes perfect. The cake is a Mary Berry recipe and its on various websites including Delicious Magazine


For the cake

  • 30g malted chocolate drink powder
  • 30g cocoa powder
  • 225g butter, softened
  • 225g caster sugar
  • 225g self-raising flour
  • 1 tsp baking powder
  • 4 eggs

For the icing 

  • 3 tbsp malted chocolate drink powder
  • 1.5 tbsp hot milk
  • 125g butter, softened
  • 250g icing sugar, plus extra for dusting
  • 50g dark chocolate (minimum 50 per cent cocoa solids), melted
  • 1 tbsp boiling water
  • About 20 Maltesers, to decorate

First you will need to grease and line the bottom of two 20cm round sandwich tins and preheat the oven to 180C / 160C fan / Gas 4.

Put the malted chocolate drink powder and cocoa powder into a large bowl and pour over 2 tablespoons of water and mix to a paste. Add the remaining cake ingredients and beat until smooth. My paste went a little lumpy and dry (maybe I should have added a little more water) and I added the remaining ingredients in the order above so had all the dry ingredients on top of the paste so I suggest adding the eggs first to keep the paste moist.



When everything is combined, divide the mixture evenly between the prepared tins and bake in the oven for 20–25 minutes – mine took 25 minutes. Let the cakes cool in the tins for 5 minutes, then turn out on to a wire rack to cool completely.

When the cakes are cool you can start on the icing. Measure the malted chocolate drink powder into a bowl,  add the hot milk and mix until smooth. Next add the butter, icing sugar and melted chocolate and mix again until smooth before adding the boiling water to give a gloss to the icing.


Choose which cake you want for the bottom layer and put it on a plate and spread over half the icing. Sandwich with the other cake and spread (or pipe) the remaining icing on top. I just spread mine rather than piping it given that I was going to put maltesers on but its personal choice! Arrange the maltesers over the top and dust with icing sugar before serving.

I’ve not tried the cake yet so will report back with a verdict tomorrow!

Update – whats the best way to say this was amazing….Everyone at work really enjoyed it, definitely chocolatey enough and given how easy it was to make I can see this being a regular! It rose well although I did level it before icing and definitely not overbaked – just a shame the oven is hotter on one side than the other! Give this one a try!
