If you are looking for a healthy recipe, this isn’t it! That said, these are very nice so a good one for a treat. I’ve never made blondies before, only brownies, and white chocolate contains more fat than other chocolates (I think) and apparently isn’t genuinely chocolate as it contains no cocoa solids…Anyway I stumbled across this recipe on Pinterest and its from another blog, Maverick Baking
- 200g butter
- 250g white chocolate
- 130g plain flour
- 100g white chocolate chunks/chips
- 3 eggs
- 1 egg yolk
- 250g caster sugar
- 1 tbsp vanilla extract
As with most recipes, start by preheating your oven to 160C / 140C Fan then grease and line a tin – the recipe recommended 8 x 8 or 8 x 12 inches.
Next chop up the butter and break the white chocolate into a heatproof bowl then you can either heat it slowly in the microwave, 30 seconds at a time, of over a pan of simmering water until its all melted and smooth.
Weigh the flour into a bowl and leave to one side while you whisk together the eggs, egg yolk, sugar and vanilla until just combined. When the butter and chocolate mixture has cooled slightly, add it to the wet mixture and whisk together before adding the flour and chocolate chips. Fold these in until just combined then pour into the prepared tin.
Bake the mixture for 55-65 minutes (mine took about 70 minutes in the end) until the mixture isn’t wobbly and you have a shiny, crackled surface (excuse the knife mark in the middle!).
Let the blondies cool before slicing them – hopefully you have the patience to wait!
These were really nice but you couldn’t eat a lot of them in one go which isn’t always a bad thing! My husband took these into work and they didn’t last very long apparently…
