Salted Caramel Cookie Bars


I saw a few of these as I was searching through Pinterest last week – I’m sure I spend hours on there but there are so many things to look at! Its good for wedding ideas if you are currently planning your own – I made all my own invites and table decorations, it was really enjoyable! I’ll be honest, with this one I kind of winged it and didn’t really follow the recipe I found, rather I used a caramel recipe from a millionaires shortbread recipe (BBC Food) and a cookie recipe from another (Good to Know). I’ve nothing to compare it to but it tasted nice – maybe under salted the caramel a little though.



  • 397g can condensed milk
  • 200g butter
  • 4 tbsp golden syrup
  • 1 tsp sea salt

Cookie dough

  • 225g caster sugar
  • 300g plain flour
  • 200g butter, softened
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 egg
  • 100g chocolate chips

I made the caramel sauce first but you could do it in either order. For the caramel though, just put all the ingredients in a pan and bring to the boil for 10 minutes. I kept the heat at a medium temperature and kept stirring until it became a caramel colour. Or do as I should have done and bought a tin of caramel (see BBC Food Cheats Salted Caramel Sauce). Take it off the heat while you make the cookie dough.


Preheat the oven to 200C / 180C Fan. If you want to follow the recipe, go for it. I went for the easy way and put all the ingredients except the chocolate chips in a bowl and mix together either by hand or using a food mixer. Once this is done add the chocolate chips and mix into the dough.


Grease and line a 9in / 23cm square cake tin and press down half the cookie dough into the bottom. Then pour in the caramel (I didn’t use all of it, I’m not sure why, but you can do) then put the remaining dough in small pieces onto the top of the caramel. Put it in the oven for 25-30 minutes or until the cookie dough is just set. I checked mine after 15 minutes and thought I’d done something wrong but don’t panic, it will set eventually!


Take out of the oven and let it cool before cutting into squares.

These were really nice and gooey with the caramel! Not healthy by any stretch of the imagination but hey, can’t be good all the time! I wish I had added a little more salt to the caramel but other than that, these were lovely. Might try and follow an actual full recipe next time and see how that goes…
